Chickpea Potato Curry
Ingredients:
-1 cup of chickpeas floor
-2 potatoes, peeled and cubed
-2 tablespoons of chopped coriander
-1 green chilli, finely chopped
-1 teaspoon of salt
-1 teaspoon of turmeric powder
-1 teaspoon of cumin powder
Instructions:
1. Heat a large pan over medium heat and add the chickpeas floor. Cook for about 5 minutes, stirring occasionally.
2. Add the potatoes, coriander, green chilli, salt, turmeric powder and cumin powder. Stir to combine and cook for another 5 minutes.
3. Add 1/2 cup of water and cover the pan. Simmer for 15 minutes, stirring occasionally.
4. Uncover the pan and cook for an additional 5 minutes, stirring occasionally, until the potatoes are cooked through and the sauce has thickened.
5. Serve the chickpea potato curry with steamed rice or naan bread. Enjoy!
