Curried Chickpea and Lentil Stew
Ingredients:
-1 tablespoon olive oil
-1 large onion, chopped
-1 teaspoon minced garlic
-1 teaspoon ground cumin
-1 teaspoon ground coriander
-1 teaspoon ground turmeric
-1/2 teaspoon ground cinnamon
-1/4 teaspoon cayenne pepper
-1 large sweet potato, peeled and cubed
-1 (15-ounce) can chickpeas, drained and rinsed
-1 (15-ounce) can lentils, drained and rinsed
-3 cups vegetable broth
-1/4 cup chopped fresh cilantro
-Salt and freshly ground black pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
2. Add the cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook, stirring, for 1 minute.
3. Add the sweet potato, chickpeas, lentils, and vegetable broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the sweet potato is tender, about 20 minutes.
4. Stir in the cilantro and season with salt and pepper, to taste. Serve hot.
