Curried Chickpea and Lentil Stew

Ingredients:

-1 can chickpeas, drained and rinsed
-1 cup lentils, rinsed
-2 carrots, diced
-1 head of broccoli, chopped
-1 can coconut milk
-1 tablespoon curry powder
-1 teaspoon turmeric
-1 teaspoon cumin
-1 teaspoon garlic powder
-1 teaspoon paprika
-1 teaspoon salt
-1/2 teaspoon black pepper

Instructions:

1. Heat a large pot over medium-high heat and add the carrots, broccoli, and a splash of water. Cook for 5 minutes, stirring occasionally.

2. Add the chickpeas, lentils, coconut milk, and spices. Stir to combine.

3. Bring to a boil, reduce heat to low, and simmer for 20 minutes, stirring occasionally.

4. Serve warm with rice or naan. Enjoy!
