Make Curried Leek Soup

Curried Leek Soup

Ingredients:
2 leeks, sliced
2 tablespoons olive oil
1 teaspoon curry powder
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground ginger
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
4 cups vegetable broth
Salt to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the sliced leeks and sauté until they are softened, about 5 minutes.

3. Add the curry powder, cumin, turmeric, ginger, coriander, cardamom, cinnamon, and black pepper. Stir to combine.

4. Pour in the vegetable broth and bring to a boil.

5. Reduce the heat to low and simmer for 15 minutes.

6. Remove from heat and let cool slightly.

7. Use an immersion blender to puree the soup until smooth.

8. Taste and adjust seasoning with salt, if needed.

9. Serve warm. Enjoy!
