Curried Ox Tail and Cauliflower Rice
Ingredients:
- 2 cups left over ox tail stew
- 1 head cauliflower, cut into florets
- 1 onion, diced
- 2 cups uncooked brown rice
- 2 tablespoons olive oil
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and cook until softened, about 5 minutes.
3. Add the curry powder, cumin, coriander, garlic powder, and salt and pepper. Stir to combine.
4. Add the cauliflower florets and stir to coat in the spices.
5. Add the left over ox tail stew and stir to combine.
6. Add the uncooked brown rice and stir to combine.
7. Cover the pot and reduce the heat to low. Simmer for 25-30 minutes, or until the rice is cooked through.
8. Serve warm and enjoy!
