Make Curried Plantain Rice
Curried Plantain Rice
Ingredients:
- 1 cup uncooked white rice
- 2 ripe plantains, peeled and sliced into 1/2 inch thick rounds
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 cups water
Instructions:
1. Heat the oil in a large saucepan over medium-high heat. Add the cumin and mustard seeds and cook until they start to sizzle.
2. Add the plantain slices and cook for 2-3 minutes, stirring occasionally.
3. Add the rice, turmeric, coriander, ginger, cardamom, cinnamon, cayenne pepper, and salt. Stir to combine.
4. Add the water and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.
5. Serve hot. Enjoy!
