Curry Chicken
Ingredients:
-2 lbs. chicken, cut into cubes
-3 cloves garlic, minced
-2 chilies, diced
-1 onion, diced
-1 tablespoon ginger, minced
-2 cinnamon sticks
-1 teaspoon cardamom
-1 teaspoon turmeric
-2 tablespoons vegetable oil
-Salt and pepper to taste
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the chicken cubes and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
3. Add the garlic, chilies, onion, ginger, cinnamon sticks, cardamom, and turmeric. Cook for an additional 5 minutes, stirring occasionally.
4. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, stirring occasionally.
5. Uncover the skillet and cook for an additional 5 minutes, stirring occasionally.
6. Serve the curry chicken over rice or with naan bread. Enjoy!
