Curry Chicken and Rice

Ingredients:

- 2 tablespoons vegetable oil
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon curry powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1/2 cup tomato sauce

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the chicken and cook until golden brown, about 5 minutes.

3. Add the curry powder, cumin, coriander, turmeric, ginger, garlic powder, onion powder, black pepper, and salt. Stir to combine and cook for 1 minute.

4. Add the rice and stir to combine.

5. Add the chicken broth and tomato sauce and stir to combine.

6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked through.

7. Serve hot. Enjoy!
