Curry-Spiced Salmon with Carrot Bulgur Pilaf
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground black pepper
- 2 cups bulgur
- 2 cups vegetable broth
- 2 cups grated carrots
- 1 cup cauliflower florets
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh parsley
- 4 (6-ounce) salmon fillets
- Salt and freshly ground black pepper, to taste
Directions:
1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
2. Add the curry powder, cumin, coriander, turmeric, ginger, cinnamon, cardamom, and black pepper and cook, stirring, for 1 minute.
3. Add the bulgur and vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
4. Add the carrots and cauliflower and cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
5. Stir in the cilantro and parsley.
6. Season the salmon with salt and pepper. Place the salmon fillets on top of the pilaf and cover. Cook until the salmon is cooked through, about 10 minutes.
7. Serve the salmon with the pilaf. Enjoy!
