Cuscus Pollo con Zanahoria
Ingredients:
-1 cup cuscus
-1 cup chicken, cooked and diced
-1 carrot, diced
-1/2 cup chicken broth
-1/4 cup olive oil
-1/2 teaspoon cumin
-1/2 teaspoon paprika
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced carrot and cook for 2-3 minutes until softened.
3. Add the cumin, paprika, salt, and pepper and cook for another minute.
4. Add the chicken and cook for another 2-3 minutes until cooked through.
5. Add the cuscus and chicken broth and stir to combine.
6. Cover and reduce the heat to low. Simmer for 10-15 minutes until the cuscus is cooked and the liquid is absorbed.
7. Serve warm and enjoy!
