Duck Pasta Salad

Ingredients:

- 8 ounces of pasta
- 2 duck breasts
- 2 cups of salad greens
- 2 tomatoes, diced
- 1 onion, diced
- 1 cup of mushrooms, sliced
- 1 echalota, diced
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Place duck breasts on a baking sheet and season with salt and pepper. Bake for 25 minutes or until cooked through.

3. Meanwhile, cook the pasta according to package instructions.

4. In a large bowl, combine the salad greens, tomatoes, onion, mushrooms, and echalota.

5. When the duck is cooked, let it cool slightly before slicing into strips.

6. Add the cooked pasta to the salad bowl and toss to combine.

7. Drizzle the olive oil and balsamic vinegar over the salad and toss to combine.

8. Add the sliced duck to the salad and toss to combine.

9. Serve the salad warm or cold. Enjoy!
