Make Egg and Brinjal Stir-Fry
Recipe Name: Egg and Brinjal Stir-Fry
Ingredients:
- 2 eggs
- 1/2 teaspoon salt
- 1 cup pasta
- 1 cup rice
- 1 brinjal, diced
- 1 tablespoon ginger, minced
Instructions:
1. Cook the pasta and rice separately according to package instructions. Set aside.
2. In a pan, heat some oil over medium heat.
3. Add the diced brinjal and minced ginger to the pan. Cook until the brinjal is slightly tender.
4. In a bowl, beat the eggs with salt.
5. Push the brinjal to one side of the pan and pour the beaten eggs into the other side.
6. Scramble the eggs until cooked through.
7. Mix the eggs with the brinjal in the pan.
8. Add the cooked pasta and rice to the pan. Stir everything together until well combined.
9. Adjust seasoning if needed.
