Make Egg and Potato Fried Rice
Recipe Name: Egg and Potato Fried Rice
Ingredients:
- 2 eggs
- 2 medium-sized potatoes, peeled and diced
- 2 cups cooked rice
- Salt and pepper to taste
- Soy sauce
- Cooking oil
Instructions:
1. Heat some oil in a wok or large skillet over medium heat.
2. Add the diced potatoes and stir-fry until they are cooked through and slightly crispy. Remove from the pan and set aside.
3. In the same pan, crack the eggs and scramble them until they are fully cooked. Remove from the pan and set aside.
4. Add a little more oil to the pan if needed, then add the cooked rice. Stir-fry for a few minutes until the rice is heated through.
5. Add the cooked potatoes and scrambled eggs back to the pan with the rice. Mix well.
6. Season with salt, pepper, and a splash of soy sauce. Stir to combine all the ingredients.
7. Continue to cook for another 2-3 minutes, stirring frequently.
8. Taste and adjust seasoning if necessary.
