Egg and Tomato Breakfast Sandwich

Ingredients:

- 2 eggs
- 1 tomato, diced
- 1/4 teaspoon salt
- 1/4 onion, diced
- 1 garlic clove, minced
- 1/4 teaspoon pepper
- 2 slices of bread
- 1/4 teaspoon oregano
- 1/4 cup shredded cabbage

Instructions:

1. In a medium bowl, whisk together the eggs, tomato, salt, onion, garlic, and pepper.

2. Heat a non-stick skillet over medium heat and add the egg mixture. Cook, stirring occasionally, until the eggs are cooked through.

3. Toast the bread in a toaster or in a skillet over medium heat.

4. Spread the oregano on one side of each slice of toast.

5. Divide the egg mixture between the two slices of toast.

6. Top each slice with the shredded cabbage.

7. Serve and enjoy!
