Ingredients:
- 2 cups cooked rice
- 1 onion, chopped
- 2 eggs
- 2 tbsp vegetable oil
- Soy sauce, to taste
- Salt and pepper, to taste
- Optional: chopped vegetables (such as peas, carrots, bell peppers)
Step by Step Guide:
1. Heat vegetable oil in a large pan or wok over medium heat.
2. Add chopped onion to the pan and sauté until translucent.
3. Push the onions to one side of the pan and crack the eggs into the other side. Scramble the eggs until cooked through.
4. Add the cooked rice to the pan and stir to combine with the onions and eggs.
5. If using, add chopped vegetables at this point and cook until slightly softened.
6. Season the fried rice with soy sauce, salt, and pepper to taste. Stir well to combine all the ingredients.
7. Continue cooking for another 2-3 minutes, stirring frequently, until everything is heated through.
