- 4 large eggs
- 2 medium potatoes, peeled and diced

- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Step-by-Step Guide:
1. In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 8-10 minutes. Remove the potatoes from the skillet and set aside.
2. In the same skillet, add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened, about 5 minutes.
3. Meanwhile, in a separate bowl, whisk together the eggs, grated Parmesan cheese, dried oregano, salt, and pepper.
