Egg Potato Noodle Stir Fry
Ingredients:
- 2 eggs
- 2 potatoes, peeled and diced
- 2 cups of noodles
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Optional: 1/4 cup of chopped onion
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced potatoes and cook until they are tender, about 5 minutes.
3. Add the noodles and cook for another 2 minutes.
4. Crack the eggs into the skillet and scramble them with the potatoes and noodles.
5. Season with salt and pepper to taste.
6. If desired, add the chopped onion and cook for another minute.
7. Serve hot. Enjoy!
