Make Eggplant and Cauliflower Bulgur Pilaf
Eggplant and Cauliflower Bulgur Pilaf
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 eggplant, diced
- 1 head cauliflower, cut into florets
- 1/2 cup bulgur
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sugar
- 1/4 cup tomato paste
- 1/4 cup tomato sauce
- 1/4 cup cream
- 1/4 cup milk
- 1/4 cup plain yoghurt
- 1/4 cup shredded cabbage
- 2 tablespoons butter
- 2 tablespoons sunflower seed oil
- 2 eggs, beaten
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the eggplant and cauliflower and cook for 5 minutes more.
3. Add the bulgur, salt, pepper, sugar, tomato paste, tomato sauce, cream, milk, yoghurt, and cabbage. Stir to combine and cook for 5 minutes more.
4. Add the butter and sunflower seed oil and stir to combine.
5. Add the beaten eggs and stir to combine.
6. Reduce the heat to low and cover the skillet. Cook for 20 minutes, stirring occasionally.
7. Serve the pilaf hot. Enjoy!
