Eggplant and Potato Pita Pockets
Ingredients:
2 large eggs
1 large tomato, diced
2 cloves garlic, minced
1 large eggplant, diced
4 pita pockets
1/2 cup milk
2 large potatoes, diced
1 chili pepper, diced
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, whisk together eggs and milk.
3. Add tomato, garlic, eggplant, potatoes, and chili pepper to the egg mixture and stir until combined.
4. Grease a baking sheet with cooking spray.
5. Place pita pockets on the baking sheet and fill each pocket with the eggplant and potato mixture.
6. Bake in preheated oven for 20 minutes, or until the pita pockets are golden brown and the filling is cooked through.
7. Serve warm. Enjoy!
