Eggplant and Potato Tortilla

Ingredients:

- 1 large eggplant, diced
- 2 potatoes, peeled and diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 large egg
- 4 large tortillas

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl, combine diced eggplant and potatoes with olive oil, salt, pepper, garlic powder, and paprika. Mix until all ingredients are evenly distributed.

3. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring halfway through.

4. In a medium bowl, whisk together the egg.

5. Heat a large skillet over medium heat and spray with cooking spray.

6. Place one tortilla in the skillet and spread the egg mixture evenly over the tortilla.

7. Top with the eggplant and potato mixture, spreading it evenly over the egg.

8. Place a second tortilla on top and press down lightly.

9. Cook for 2-3 minutes, or until the bottom tortilla is golden brown.

10. Carefully flip the tortilla and cook for an additional 2-3 minutes, or until the other side is golden brown.

11. Remove from heat and repeat with remaining tortillas and filling.

12. Serve warm. Enjoy!
