Eggplant Lentil Bake
Ingredients:
-1 large eggplant, cut into 1/2 inch slices
-1/2 cup cooked lentils
-1 zucchini, sliced
-1/2 cup crumbled goat cheese
-1/4 cup olive oil
-1 teaspoon garlic powder
-1 teaspoon dried oregano
-1/2 teaspoon salt
-1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 375°F.
2. Arrange the eggplant slices in a single layer on a baking sheet.
3. In a small bowl, combine the lentils, zucchini, goat cheese, olive oil, garlic powder, oregano, salt, and pepper.
4. Spread the lentil mixture over the eggplant slices.
5. Bake for 25-30 minutes, or until the eggplant is tender and the lentil mixture is golden.
6. Serve warm. Enjoy!
