Make Eggplant Parmesan

Eggplant Parmesan

Ingredients:

- 2 tablespoons butter
- 2 cups shredded mozzarella cheese
- 1 cup all-purpose flour
- 2 eggs, lightly beaten
- 1 large eggplant, sliced into 1/4-inch thick rounds

Instructions:

1. Preheat oven to 350°F.

2. Grease a 9x13-inch baking dish with butter.

3. Place the eggplant slices in a single layer in the baking dish.

4. In a shallow bowl, combine the flour and eggs.

5. Dip each eggplant slice into the egg mixture, then into the flour mixture, coating both sides.

6. Place the eggplant slices back into the baking dish.

7. Top with the mozzarella cheese.

8. Bake for 25-30 minutes, or until the cheese is melted and the eggplant is tender.

9. Serve warm. Enjoy!
