Eggplant Pasta Bake

Ingredients:

- 1 large onion, diced
- 2 cloves garlic, minced
- 1 large eggplant, diced
- 8 ounces pasta of your choice
- 4 eggs
- Salt and pepper to taste
- Olive oil

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat a large skillet over medium-high heat and add a few tablespoons of olive oil.

3. Add the onion and garlic and sauté until softened, about 5 minutes.

4. Add the eggplant and sauté for an additional 5 minutes.

5. Meanwhile, cook the pasta according to package instructions.

6. Once the pasta is cooked, drain it and add it to the skillet with the onion, garlic, and eggplant.

7. In a separate bowl, whisk together the eggs and season with salt and pepper.

8. Pour the egg mixture over the pasta and vegetables and stir to combine.

9. Transfer the mixture to a greased baking dish.

10. Bake for 25-30 minutes, or until the top is golden brown and the egg is set.

11. Serve warm. Enjoy!
