Eggplant Pasta with Tomatoes
Ingredients:
- 1 large eggplant, diced
- 1 pound of your favorite pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups of diced tomatoes
- 1/4 cup of chopped fresh basil
- Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the diced eggplant and cook for 5 minutes, stirring occasionally.
3. Add the garlic and cook for an additional minute.
4. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
5. Add the cooked pasta to the skillet and stir to combine.
6. Add the chopped basil and season with salt and pepper to taste.
7. Serve warm. Enjoy!
