Make Eggs Benedict with Bacon, Cherry Tomatoes, and Emmental Cheese
Eggs Benedict with Bacon, Cherry Tomatoes, and Emmental Cheese
Ingredients:
- 4 slices of bacon
- 2 eggs
- 2 cherry tomatoes, halved
- 2 slices of Emmental cheese
- 2 English muffins, split
- 2 tablespoons of butter
- 2 tablespoons of beer
- 2 tablespoons of champagne
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 350°F.
2. Place the bacon on a baking sheet and bake for 15 minutes, or until crispy.
3. Meanwhile, melt the butter in a large skillet over medium heat.
4. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3 minutes.
5. Place the English muffins on a baking sheet and top each half with a slice of cheese.
6. Place the baking sheet in the oven and bake for 5 minutes, or until the cheese is melted.
7. Place the bacon, cherry tomatoes, and eggs on top of the English muffins.
8. In a small saucepan, combine the beer and champagne and bring to a simmer.
9. Simmer for 5 minutes, or until the mixture has reduced by half.
10. Drizzle the beer and champagne reduction over the eggs and season with salt and pepper.
11. Serve immediately. Enjoy!
