Make Eggs Benedict with Gammon

Eggs Benedict with Gammon

Ingredients:

- 2 eggs
- 2 slices of gammon
- 1 tomato, sliced
- 1 potato, boiled and diced
- 1 onion, diced
- 1 garlic clove, minced
- 2 tablespoons of chopped parsley
- Salt and pepper, to taste

Instructions:

1. Preheat the oven to 350 degrees F.

2. Place the gammon slices on a baking sheet and bake for 15 minutes.

3. Meanwhile, heat a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

4. Add the diced potato and tomato and cook for another 5 minutes.

5. Add the parsley, salt, and pepper and cook for another minute.

6. Crack the eggs into the skillet and cook until the whites are set, about 3 minutes.

7. Place the gammon slices on a plate and top with the egg mixture.

8. Serve warm and enjoy!
