Make Elachi-Coriander Vegetable Curry
Elachi-Coriander Vegetable Curry
Ingredients:
- 2 tablespoons of oil
- 1 teaspoon of elachi
- 1 teaspoon of coriander
- 1 capsicum, diced
- 1 onion, diced
- 2 tomatoes, diced
- 1 carrot, diced
- 1 apple, diced
- 1 banana, diced
- 1 cup of water
- Salt and pepper to taste
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the elachi and coriander and cook for 1 minute.
3. Add the capsicum, onion, tomatoes, carrot, apple and banana and cook for 3 minutes.
4. Add the water and bring to a boil.
5. Reduce the heat and simmer for 10 minutes.
6. Season with salt and pepper to taste.
7. Serve hot with rice or naan. Enjoy!
