Make Empanadas de Pescado
Recipe: Empanadas de Pescado
Ingredients:
- 1 lb white fish fillets, such as cod or tilapia
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green olives
- 1/4 cup raisins
- 1 package of empanada dough (store-bought or homemade)
- Oil for frying
Instructions:
1. In a large skillet, heat some oil over medium heat. Add the onion, garlic, and red bell pepper, and sauté until softened.
2. Add the white fish fillets to the skillet and cook until they are cooked through and flake easily with a fork.
3. Stir in the cumin, paprika, salt, and pepper, and cook for another minute to let the flavors meld.
4. Remove the skillet from the heat and stir in the cilantro, green olives, and raisins. Let the filling cool slightly.
5. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
6. Roll out the empanada dough and cut it into circles using a round cutter or a small plate.
7. Place a spoonful of the fish filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, and crimp the edges with a fork to seal.
8. Place the empanadas on the prepared baking sheet and brush the tops with some oil.
9. Bake the empanadas in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy.
10. Serve the empanadas de pescado hot with your favorite dipping sauce or salsa. Enjoy!
