Carrot Cake

Ingredients:

-2 cups all-purpose flour
-2 teaspoons baking powder
-1 teaspoon baking soda
-1 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1/2 teaspoon salt
-1 cup vegetable oil
-1 1/2 cups granulated sugar
-3 large eggs
-2 teaspoons vanilla extract
-2 cups grated carrots

Instructions:

1. Preheat oven to 350°F. Grease a 9-inch round cake pan.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In a large bowl, beat together the oil, sugar, eggs, and vanilla extract until light and fluffy.

4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

5. Fold in the grated carrots.

6. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
