Ingredients:
- 1 cup red lentils
- 1/2 cup fine bulgur
- 1 onion, finely chopped
- 1 carrot, grated
- 1 red bell pepper, finely chopped
- 2 tablespoons tomato paste

- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried mint
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 6 cups vegetable or chicken broth
- 2 tablespoons olive oil
- Salt to taste

Instructions:
1. In a large pot, heat olive oil over medium heat. Add the chopped onion, grated carrot, and red bell pepper. Sauté until the vegetables are soft, about 5 minutes.
2. Add the tomato paste and red pepper paste to the pot. Stir well to combine with the vegetables.
3. Rinse the red lentils and bulgur under cold water until the water runs clear. Add them to the pot along with the cumin, paprika, dried mint, black pepper, and red pepper flakes (if using). Stir everything together.
4. Pour in the vegetable or chicken broth and bring the soup to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the lentils and bulgur are cooked through.
5. Season the soup with salt to taste. If the soup is too thick, you can add more broth or water to reach your desired consistency.
