Fajita Breakfast Burrito

Ingredients:

- 2 fajita-style tortillas
- 2 eggs
- 1/4 cup shredded cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced tomato
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion, bell pepper, and tomato to the skillet and cook until softened, about 5 minutes.

3. Add the garlic powder, salt, and pepper and stir to combine.

4. Crack the eggs into the skillet and scramble until cooked through.

5. Place one tortilla on a plate and top with half of the egg mixture and half of the cheese.

6. Top with the second tortilla and press down lightly.

7. Heat a large skillet over medium-high heat and place the burrito in the skillet.

8. Cook for 2-3 minutes per side, or until golden brown and crispy.

9. Cut in half and serve. Enjoy!
