Make Fajita Veggie Omelette
Fajita Veggie Omelette
Ingredients:
- 2 tablespoons olive oil
- 1/2 red bell pepper, cut into thin strips
- 1/2 green bell pepper, cut into thin strips
- 1/2 onion, cut into thin strips
- 1/2 teaspoon fajita seasoning
- 1/2 cup chopped tomatoes
- 1/4 teaspoon salt
- 1/2 cup chopped broccoli
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons jam
- 4 eggs, lightly beaten
- 1/2 cup grated carrot
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the bell peppers, onion, and fajita seasoning and cook for 5 minutes, stirring occasionally.
3. Add the tomatoes, salt, and broccoli and cook for an additional 5 minutes, stirring occasionally.
4. Reduce the heat to low and add the cheddar and mozzarella cheeses, stirring until melted.
5. Spread the jam over the cheese mixture.
6. Pour the eggs over the cheese and jam mixture and sprinkle with the grated carrot.
7. Cook for 8-10 minutes, or until the eggs are cooked through.
8. Serve hot. Enjoy!
