Fennel and Corona Bean Salad with Golden Tomatoes
Ingredients:
- 2 cups cooked corona beans
- 2 cups diced golden tomatoes
- 1/2 cup diced fennel
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked corona beans, diced golden tomatoes, and diced fennel.
2. In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper.
3. Pour the dressing over the bean mixture and toss to combine.
