Fennel Roasted Chicken and Peppers
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 teaspoons fennel seeds
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts
- 2 bell peppers, sliced
- 2 tablespoons freshly chopped parsley
Instructions:
1. Preheat oven to 375 degrees F.
2. In a small bowl, combine olive oil, garlic, fennel seeds, oregano, thyme, paprika, salt, and pepper.
3. Place chicken breasts in a large baking dish and pour the olive oil mixture over the chicken. Toss to coat.
4. Arrange the bell pepper slices around the chicken.
5. Bake for 25-30 minutes, or until chicken is cooked through.
6. Sprinkle with freshly chopped parsley and serve. Enjoy!
