Fenugreek Seed Sprouts & Tofu Pasta
Ingredients:
-1/3 head of cabbage, chopped
-2 tomatoes, chopped
-1/4 cup of sesame seeds
-1/2 cup of mozzarella cheese, shredded
-1/2 cup of fenugreek seed sprouts
-2 eggs
-1/4 teaspoon of asafoetida
-1/2 teaspoon of paprika
-1/4 cup of cream
-2 tablespoons of olive oil
-2 tablespoons of white vinegar
-1/2 teaspoon of salt
-1/2 teaspoon of pepper
-1/2 pound of pasta
-1/2 pound of tofu, cubed
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large pot, bring water to a boil and cook pasta according to package instructions. Drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add tofu cubes and cook until golden brown, about 5 minutes.
4. Add cabbage, tomatoes, sesame seeds, and fenugreek seed sprouts to the skillet and cook for an additional 5 minutes.
5. In a medium bowl, whisk together eggs, asafoetida, paprika, cream, white vinegar, salt, and pepper.
6. Pour egg mixture into the skillet and stir until combined.
7. Add cooked pasta to the skillet and stir until combined.
8. Transfer the pasta mixture to a 9x13 inch baking dish. Sprinkle mozzarella cheese over the top.
9. Bake in preheated oven for 20 minutes or until cheese is melted and bubbly.
10. Serve hot and enjoy!
