Fettuccine Carbonara with Bacon and Chorizo


- 8 ounces fettuccine
- 4 slices of bacon, diced
- 4 ounces chorizo, diced
- 2 cloves garlic, minced
- 2 eggs
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 tablespoons chopped parsley


1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions.

2. Meanwhile, in a large skillet over medium heat, cook the bacon and chorizo until the bacon is crisp and the chorizo is cooked through. Remove the bacon and chorizo from the skillet and set aside.

3. Add the garlic to the skillet and cook for 1 minute.

4. In a medium bowl, whisk together the eggs and Parmesan cheese.

5. When the pasta is done cooking, drain it and add it to the skillet with the garlic. Turn the heat to low and add the egg mixture, stirring constantly until the eggs are cooked and the sauce is thickened.

6. Add the bacon and chorizo back to the skillet and season with salt and pepper.

7. Serve the fettuccine carbonara topped with the chopped parsley. Enjoy!
