Recipe: Fideos
Ingredients:
- 8 oz fideos (vermicelli noodles)
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. In a large skillet, heat the olive oil over medium heat. Add the fideos and toast them until golden brown, stirring frequently to prevent burning. Remove the fideos from the skillet and set aside.
2. In the same skillet, add a bit more olive oil if needed. Add the diced onion and garlic, and sauté until softened and fragrant.
3. Add the diced bell peppers to the skillet and cook until they start to soften.
4. Stir in the diced tomatoes, chicken or vegetable broth, paprika, cumin, salt, and pepper. Bring the mixture to a simmer.
5. Add the toasted fideos back into the skillet, stirring to combine with the other ingredients.
6. Cover the skillet and let the fideos simmer for about 10-15 minutes, or until the noodles are cooked through and the liquid is absorbed.
7. Once the fideos are cooked, remove the skillet from the heat and let it sit, covered, for a few more minutes.
8. Serve the fideos hot, garnished with chopped fresh parsley.
