Fideos con Huevo, Tuco y Queso
Ingredients:
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of freshly ground black pepper
- 1/2 pound of fideos (short cut pasta)
- 2 cups of chicken broth
- 2 large eggs
- 1/4 cup of tuco (tomato-based sauce)
- 1/2 cup of shredded white cheese
- 1/4 cup of shredded cheddar cheese
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the garlic, onion, and bell pepper and cook until softened, about 5 minutes.
2. Add the cumin, chili powder, smoked paprika, oregano, salt, and pepper and cook for another minute.
3. Add the fideos and stir to coat with the spices.
4. Pour in the chicken broth and bring to a boil. Reduce the heat to low and simmer for 8-10 minutes, stirring occasionally, until the fideos are cooked.
5. Crack the eggs into the skillet and stir to combine.
6. Add the tuco and stir to combine.
7. Sprinkle the white cheese and cheddar cheese over the top and stir to combine.
8. Cook for another minute until the cheese is melted.
9. Serve the fideos hot. Enjoy!
