Fideos con Huevos y Queso

Ingredients:

- 2 cups fideos secos
- 2 eggs
- 1/2 cup shredded cheese
- 2 potatoes, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the potatoes and cook until lightly browned, about 5 minutes.

3. Add the fideos and cook for another 3-4 minutes, stirring occasionally.

4. Crack the eggs into the pan and stir to combine.

5. Add the cheese and stir until melted.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
