Make Fideos con Patatas Duquesas
Recipe Name: Fideos con Patatas Duquesas
Ingredients:
- 200g fideos (vermicelli pasta)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- 4-6 patatas duquesas (duchess potatoes)
Instructions:
1. In a large pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
2. Add the diced red bell pepper to the pan and cook until softened.
3. Pour in the can of diced tomatoes and sprinkle in the paprika. Season with salt and pepper to taste.
4. Add the fideos to the pan and stir to combine with the tomato mixture. Cook for about 10-12 minutes, stirring occasionally, until the fideos are cooked through and most of the liquid has been absorbed.
5. While the fideos are cooking, prepare the patatas duquesas according to package instructions or your preferred method.
