Fish and Potato Bake
Ingredients:
- 2 large potatoes, peeled and cut into 1/2-inch cubes
- 2 fillets of white fish, such as cod or haddock
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sour cream
Instructions:
1. Preheat oven to 375°F.
2. Place the potatoes in a large bowl and toss with the olive oil, salt, and pepper.
3. Spread the potatoes in a single layer on a baking sheet.
4. Bake for 20 minutes, stirring once halfway through.
5. Place the fish fillets on top of the potatoes.
6. Bake for an additional 10 minutes, or until the fish is cooked through.
7. Remove from the oven and top with the sour cream.
8. Serve immediately. Enjoy!
