Fish and Rice Bowl

Ingredients:

- 2 cups cooked white rice
- 1 can of white beans, drained and rinsed
- 1 large tomato, diced
- 1 carrot, diced
- 1 jalapeño, diced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 2 fillets of white fish (such as cod or tilapia)

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine the cooked rice, beans, tomato, carrot, jalapeño, and olive oil. Season with salt and pepper to taste.

3. Place the fish fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.

4. Bake the fish in the preheated oven for 15-20 minutes, or until cooked through.

5. Divide the rice and vegetable mixture between two bowls. Top each bowl with a fish fillet.

6. Serve and enjoy!
