Fish Curry with Rice
Ingredients:
- 2 tablespoons groundnut oil
- 1 onion, chopped
- 2 tablespoons tomato paste
- 1 teaspoon curry powder
- 1 teaspoon thyme
- 1 teaspoon pepper
- 2 tablespoons chilli sauce
- 500g fish fillets, cut into cubes
- 2 cups cooked rice
Instructions:
1. Heat the groundnut oil in a large saucepan over medium heat.
2. Add the onion and cook for 3-4 minutes, until softened.
3. Add the tomato paste, curry powder, thyme and pepper and cook for a further 2 minutes.
4. Add the chilli sauce and fish cubes and cook for 5 minutes, stirring occasionally.
5. Add the cooked rice and stir to combine.
6. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
7. Serve with extra chilli sauce, if desired. Enjoy!
