Fish Finger and Potato Salad

Ingredients:

- 2 large potatoes, peeled and cubed
- 2 carrots, peeled and cubed
- 2 tablespoons paprika
- 8 fish fingers
- 1/2 cup grated cheese
- 2 cups shredded lettuce

Instructions:

1. Preheat oven to 375°F.

2. Place the potatoes and carrots in a large bowl and sprinkle with paprika. Toss to combine.

3. Spread the potato and carrot mixture onto a baking sheet and bake for 25 minutes, stirring halfway through.

4. Meanwhile, cook the fish fingers according to package instructions.

5. Once the potatoes and carrots are cooked, remove from the oven and let cool.

6. In a large bowl, combine the cooked potatoes and carrots, fish fingers, cheese, and lettuce.

7. Serve the salad chilled or at room temperature. Enjoy!
