Fish with Carrot and Onion

Ingredients:

- 2 large carrots, peeled and sliced
- 1 onion, peeled and diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 pound fish fillets (such as cod, haddock, or tilapia)

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine carrots, onion, garlic, olive oil, salt, and pepper. Toss to combine.

3. Spread the mixture onto a baking sheet. Place the fish fillets on top of the vegetables.

4. Bake for 15-20 minutes, or until the fish is cooked through and the vegetables are tender.

5. Serve with your favorite side dish. Enjoy!
