Fish with Parsley Potatoes
Ingredients:
-4-6 white fish fillets
-4 tablespoons butter
-4-6 potatoes, peeled and cut into cubes
-2 tablespoons fresh parsley, chopped
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Grease a baking dish with 1 tablespoon of butter.
3. Place fish fillets in the baking dish and season with salt and pepper.
4. In a separate bowl, combine potatoes, parsley, remaining butter, and salt and pepper.
5. Place potato mixture around the fish in the baking dish.
6. Bake in preheated oven for 25-30 minutes, or until fish is cooked through and potatoes are tender.
7. Serve hot. Enjoy!
