Fried Rice with Chicken and Eggs
Ingredients:
- 2 cups of white rice
- 2 eggs
- 1 chicken breast, diced
- 2 spring onions, chopped
- 1 red onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of chilli flakes
- 2 tablespoons of vegetable oil
- Salt and pepper, to taste
Instructions:
1. Cook the white rice according to package instructions. Once cooked, set aside and let cool.
2. Heat the vegetable oil in a large skillet over medium-high heat. Add the diced chicken and cook until golden brown and cooked through. Remove from the skillet and set aside.
3. In the same skillet, add the red onion, spring onions, garlic, and chilli flakes. Cook for 2-3 minutes, stirring occasionally.
4. Add the cooked rice to the skillet and stir to combine. Cook for 3-4 minutes, stirring occasionally.
5. Push the rice to one side of the skillet and add the eggs. Scramble the eggs until cooked through.
6. Add the cooked chicken back to the skillet and stir to combine. Cook for an additional 2-3 minutes.
7. Season with salt and pepper, to taste. Serve hot. Enjoy!
