Coconut Manioc Pancakes
Ingredients:
- 2 eggs
- 1 cup manioc flour
- 1 cup coconut milk
- 2 tablespoons melted butter
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions:
1. In a medium bowl, whisk together the eggs, manioc flour, coconut milk, melted butter, baking powder, salt, cinnamon, and nutmeg until combined.
2. Heat a large non-stick skillet over medium heat. Grease the skillet with a little bit of butter or oil.
3. Pour 1/4 cup of the batter into the skillet and spread it out into a thin circle. Cook for 2-3 minutes until the edges start to brown and the center is set. Flip the pancake and cook for an additional 2-3 minutes.
4. Transfer the cooked pancake to a plate and repeat with the remaining batter.
5. Serve the pancakes with your favorite toppings and enjoy!
