Make French Onion Soup

French Onion Soup

Ingredients:

-4 large yellow onions, thinly sliced
-3 tablespoons butter
-3 tablespoons olive oil
-2 cloves garlic, minced
-1 teaspoon dried thyme
-1 teaspoon dried oregano
-1 bay leaf
-1/2 teaspoon freshly ground black pepper
-1/4 teaspoon salt
-6 cups beef broth
-1/2 cup dry white wine
-1/4 cup brandy
-1/4 cup all-purpose flour
-1/2 cup grated Gruyere cheese
-1/4 cup grated Parmesan cheese

Instructions:

1. In a large pot, heat the butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until the onions are golden brown and caramelized, about 20 minutes.

2. Add the garlic, thyme, oregano, bay leaf, pepper, and salt and cook for 1 minute.

3. Add the beef broth, white wine, and brandy and bring to a boil. Reduce the heat and simmer for 15 minutes.

4. In a small bowl, whisk together the flour and 1/2 cup of the soup broth until smooth. Add the mixture to the soup and stir to combine. Simmer for 10 minutes.

5. Preheat the oven to 350°F.

6. Ladle the soup into oven-safe bowls. Top each bowl with a sprinkle of Gruyere and Parmesan cheese.

7. Bake for 15 minutes, or until the cheese is melted and bubbly.

8. Serve hot. Enjoy!
