Recipe: French Onion Soup
Ingredients:
- 4 large onions, thinly sliced
- 4 tablespoons butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 6 cups beef broth
- 1/2 cup dry white wine
- 1 bay leaf
- 4 slices French bread
- 1 cup shredded Gruyere cheese
Instructions:
1. In a large pot, melt the butter with the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
2. Add the minced garlic, sugar, salt, and black pepper to the onions and cook for another 2-3 minutes.
3. Sprinkle the flour over the onion mixture and stir to combine. Cook for 2-3 minutes to get rid of the raw flour taste.
4. Slowly pour in the beef broth and white wine, stirring constantly to avoid lumps. Add the bay leaf and bring the soup to a simmer.
5. Let the soup simmer for about 20-30 minutes to allow the flavors to meld together.
6. Preheat the broiler. Ladle the soup into oven-safe bowls and top each with a slice of French bread. Sprinkle the Gruyere cheese over the bread.
7. Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
